A sharp increase in private production and free trade of food products including meat raw materials, semi-cooked products, and ready-to-use meat products facilitate various falsifications of structure and kind of raw components. For economic purposes meat raw materials, valuable fish species and caviar are falsified and sold as high-quality products the most often. Both locally produced and imported counterfeit products can cause consumer economic loss (increased costs), be harmful to health (import of meats or feeds which is banned in Russia), cause moral harm in the religious or national aspects (ban for certain types of meat and poultry).
The most effective way of detecting such counterfeit products is PCR with highly specific primers which allow identifying DNA of specific animal species in one reaction tube. Determination of the raw material composition by PCR allows for fast and accurate detection of unauthorized impurities in food products as well as for differentiation of species composition in the product.
